Tico Tuna Salad:
Fresh tuna, cooked
Avocado, large and ripe
Cabbage, thinly sliced
Mix it, tastes so good. For an added touch put it on tacos.
Thanks for the suggestion! Only 2/3rds of adventuresingreen are vegan - so, being the omnivore, I will most definitely try this out. I’m not a huge Mayo fan though - so I’ll probably use something else - maybe blue cheese dressing? Hmmm… experiment time. - Alison
Hey Projectbe: have you tried to make tuna ceviche. with ahi grade tuna it’s a cinch. You just cut it really fine, like you are making a tartar… then you blend it with finely chopped red onions, cilantro, shaved carrots and even orange slices. mix well with 1/2 cup lemon juice and splash of rice vinegar, salt, pepper and hint of cumin and omg foodgasm! I used to make this pre-vegan days! - Cristi
also… instead of mayo in your salads try greek yogurt!
