White Bean and Caramelized Onion Pizza
Came across this recipe the other day and had to make it. I personally love white beans, and onion and any type of pizza, so it was a no brainer.

This was so easy to make. I used the pre made pizza dough that they sell in the bakery department of most super markets, but if you have time feel free to make your own, or get the pre packaged ones (Boboli for example).
Then coarsely chop one whole sweet onion and throw it in a pan over med heat and let it caramelize stirring occasionally. Once the onions are fully caramelized remove one third and set aside. Add one can of white beans to the reamaining onions in the pan. Let the beans heat through and then put the mixture in the food processor. Add some salt and pepper and a pinch of oregano. Process until the mixture is a paste-like consistency.
Spread the paste on the pizza crust and top with the remaining caramelized onions and sliced tomatoes. Bake the whole thing until the crust is golden brown and crispy.
This was so good I could not stop eating it. Day two I realized that kalamata olives would add an awesome twist and added some on top before reheating. Seriously this was delicious and easy I highly recommend it.
