Crustless Tuna Pie

Tired from a long weekend & not much in the cupboard to work with, so I had to get a bit creative …. tuna? 

In a skillet I sauteed a red bell pepper (finely diced) with some minced garlic, chopped cilantro & spinach. I added two cans of drained tuna, 1/2 can of diced tomatoes, salt, pepper, tabasco. Mix well. Add 1/2 cup of flour & 2 eggs beat. Mix well. Simmer for a few minutes then transfer to a baking dish and bake at 350F for 15 minutes.

Tasty!!! I served it with roasted broccoli florets & toast.

Broccoli- Zucchini Pie
In a baking pan compress a thin layer of veggie burger on the bottom of the pan, layer diced onion, broccoli, spinach and tomato until the top - seasoning with salt, pepper, granulated garlic, & oregano.
In a large bowl mix 2 cups soy milk, 1 tbsp vinegar, blackening seasoning
Slice zucchini long ways and thin, dip in soy milk mixture and then coat w/ shredded coconut and make a layer on the top of your baking dish. 
Bake at 275F for 30 minutes. ilovenewinventions - cristi

Creamy Black Beans: I couldn’t tell what I was in the mood for all day - it was a mix of mexican or mac & cheese. I couldn’t pick, so I chose both in an experiment which actually ended up pretty good.
Cook 1 can of black beans in a pot
In a separate pan, sauté 1/2 cup of onion in olive oil
Add 2 tbsp of Spicy Sherry Pepper Sauce to pan
Add 1 tbsp of curry powder to pan
Add 1/2 cup of diced tomato to pan
Drain cooked beans of all liquid & then add to pan
Turn off heat & mix in 1 tbsp of Sour Cream & top with Cheddar Jack Cheese
