Tomato sauce poached egg
This is a recipe I found online and it is soooo good. And so simple all you need is your favorite kind of bread, tomato sauce, egg, and some fresh basil. First toast your bread. I used whole wheat French bread. Then over medium heat in a pan heat up your favorite tomato sauce, or make your own if you have time. When the sauce is warm make a small well in the sauce. Crack an egg in the well and cover the pan. Chop fresh basil and sprinkle over egg and sauce. When egg is cooked to your satisfaction depending how runny you want the yolk, pour sauce an egg onto the toast. Then enjoy! I would have never thought to poach an egg in tomato sauce, but it’s so delicious I’m glad someone told me about it! Kerri
