So Cristi's Niece is pretty Cute but....
Have you seen my brand new nephew?  Hes freaking adorable. And seriously getting more adorable by the day. It's trip time again!
So last year I was supposed to go to Africa with Alison and it ended up not happening. Sad I know, but I ended up going to Norway and Amsterdam instead. Which was awesome. Well Its about time for my yearly trip (I try to make sure to leave the country at least once a year it helps me stay sane) and I have decided to give Africa another try! GOOOOO... ME!

Extreme Couponing for Charity
I’m not sure if any of you have seen the show Extreme Couponing on TLC but it is crazy. Italian Tofu Pie
On Monday’s I usually make a vegan vegetable lasagna with tofu cashew ricotta…. but no in the mood for lasagna so I used all the same ingredients (sans pasta) and made something else. In a food processor coarsely grind 3 zucchini, 2 onions, 1 carrot, cashews, walnuts, basil. Mix in a bowl with 1 can of organic diced tomato, granulated garlic, salt, pepper, paprika and oregano. Roped Vases
Work has been stressful as of late, so I’ve been breezing through wine bottles. I always cringe a little when I have to get rid of empty bottles - because they really are gorgeous. I found this project online, got some tacky glue, twine, and went to town.  I love how these look upcycled as vases in my house! Yay!

Stuffed Portobello
Saute 1/2 onion, spinach, 1/2 lb tofu, garlic… once onions are caramelized throw everything in the food processor until it looks like a green goop.  Scoop out the bottom of the portobellos and fill with mixture. Sprinkle with spicy monterey jack cheese and bake at 350F for 30 minutes. You can eat them alone or serve them over noodles with sauce for an impromtu italian dish :)
